Refreshing Cucumber Salad

It’s summer time and we are just absolutely bored with watermelons here in my household. There’s only so many summer fruits you can eat and sometimes you want something different. Look no further than Mama Mel’s healthy and clean cucumber salad! This refreshing meal is near zero in calories and will have you coming back for more in your weight loss journey!

  • 1 large cucumber, peeled and thinly sliced
  • 1/2 small red onion, peeled and thinly sliced
  • 1/4 cup white vinegar
  • 1/4 cup water
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper


  1. In a medium bowl, combine cucumber, red onion, vinegar, water, sugar, salt, and pepper.
  2. Mix well and refrigerate for at least 1 hour.
  3. Just before serving, mix in fresh dill (if desired).
